Artichokes are flowers belonging to the burdock family. A bud with hard and dense leaves, visually resembling a pine cone, is used for food. Artichokes came to Russia at the direction of Peter I, but as an ornamental plant, they began to cook dishes from them much later.
It is necessary
- Ingredients for 4 persons:
- - artichokes - 6 pieces;
- - dry-cured ham - 60 g;
- - a clove of garlic and shallots;
- - dried porcini mushrooms - 3-4 pieces;
- - white bread - 1 piece;
- - a few sprigs of parsley (only leaves are used);
- - olive oil;
- - salt and pepper;
- - 1-2 lemons.
Instructions
Step 1
Soak the mushrooms in boiling water for 1, 5 hours in advance, then squeeze.
Step 2
Pour cold water into a large cup, squeeze the juice of two lemons into it.
Step 3
For artichokes, we clean the stem from the outer layer (it is the toughest), remove the outer hard leaves and cut off the tips of the petals (3-4 centimeters). Cut the artichokes lengthwise into 2 halves and immediately put them in lemon water, otherwise they will darken. Spread the artichoke leaves with our hands and remove the fibers from the bottom of the cup.
Step 4
Finely chop the ham, garlic and shallots, chop the mushrooms and parsley. Cut off the crust of bread, soak it in water and immediately put it into minced meat, salt and pepper to taste, mix the ingredients thoroughly.
Step 5
Heat a few tablespoons of olive oil in a frying pan, stuff the artichokes tightly and put them in the frying pan, cut down. Salt, pepper, sprinkle with oil and fry over medium heat for 7-10 minutes.
Step 6
Turn the artichokes over, pour some hot water into the pan, simmer the artichokes for 20 minutes. We serve the dish hot.
