  • - butter - 70 g;
  • - yolk - 1 pc;
  • - milk - 30 ml;
  • - cocoa powder 2 tablespoons;
  • - cognac 2 tablespoons;
  • - vanillin.
  • For light cream:
  • - sugar - 2/3 cup;
  • - butter - 150 g;
  • - yolk - 1 pc.;
  • - milk - 100 ml;
  • - cognac - 1 tablespoon;
  • - vanillin.

Instructions

Step 1

Separate the whites from the yolks and leave them at room temperature for a few hours, then beat them into a lather. Fry the chopped nuts in a dry frying pan. Mix them with flour and sugar. Then carefully add the mixture to the protein foam and stir until smooth.

Step 2

Take 2 baking dishes. Line the bottom with baking paper. Until the protein mass has settled, quickly put it in the molds so that you get 2 cakes approximately 1 centimeter thick.

Step 3

Preheat oven to 110 degrees. Place the tins with the dough in it and bake the cakes for 2 hours. Remove from oven and let cool.

While the cakes are cooling, prepare 2 creams: dark and light. For each, combine milk, sugar and yolks first. Heat the mixture with constant stirring. Then strain and refrigerate. Whisk in the cream, gradually adding in the soft butter and the rest of the ingredients.
