There is a wide range of noodles made from different types of flour on store shelves, but homemade noodles are out of competition. Recipes for many dishes involve the use of homemade noodles. Although this process is laborious, the result will exceed all expectations. Delicious and delicate dishes with homemade noodles will surely please big and small gourmets.
Homemade noodle recipe
To make noodles at home, you need to take the following products:
- 950 g of wheat flour;
- 6 eggs;
- 200 ml of water;
- 20 g of salt.
Sift the wheat flour through a sieve onto a work surface and form a mound. Make a depression in it, pour in salted cold water and well-stirred eggs. Then start mixing the flour with the liquid, gradually taking the flour all around from the edges to the middle. Thus, mix all the liquid with half the flour, then mix the resulting semi-liquid dough with the rest of the flour.
Separate a small part (about 400-500 grams) from the prepared dough and knead this piece with your hands until the dough is smooth and steep, then roll it into a bun. Process the whole dough in this way.
After kneading, let the formed koloboks rest for about half an hour. Then roll each one into an oblong strip first, sprinkle it with flour and fold it in half. Roll out again, sprinkle with flour again, fold in 3-4 layers and continue to roll out until you get a layer 1-1.5 millimeters thick.
Sprinkle the prepared dough layers with flour and fold one on top of the other in several layers. Then cut them into longitudinal strips 35-45 millimeters wide, which in turn cut across into 3-4 millimeters wide noodles.
The dough should be so steep that the layers sprinkled with flour and folded in 3-4 layers do not stick together when rolling and cutting the noodles.
Then put the cooked noodles in a layer of no more than 1 centimeter on trays or a wire rack and dry at room temperature. Please note that un-dried noodles cannot be stored, they must be consumed on the day of preparation.
Chicken Noodle Soup Recipe
To prepare a rich and aromatic soup with homemade noodles and chicken, you will need:
- 700 g of chicken;
- 200 g of homemade noodles;
- 1 onion;
- 1 carrot;
- 1 bell pepper;
- 2 tbsp. l. oils;
- greens;
- salt.
Wash the chicken, pat dry with a napkin or paper towel and cut into small pieces. Put them in a saucepan, cover with 2 liters of water, put on medium heat and bring to a boil. Remember to skim and remove any foam that appears.
Peel and chop vegetables: onions - in small pieces, bell peppers - in strips, and grate carrots on a coarse grater. Lightly fry the prepared vegetables in vegetable oil or ghee. Then add to the chicken broth, salt it and continue to cook the soup for half an hour.
Then add homemade noodles to the broth, bring to a boil and cook for another 7-10 minutes. Then remove the soup from the heat, garnish with finely chopped herbs and serve.
