1. Put the milk on the stove, add salt, stir and wait until it boils.
2. As soon as the milk boils, you need to pour kefir into the pan and mix quickly.
3. When the mass curdles and becomes curdled (this happens almost immediately), you need to throw it on a sieve, colander or cheesecloth.
4. After all the excess liquid has drained off, add an egg beaten with citric acid to the cheese mass.
5. Mix the whole mass well again and beat until it becomes airy and homogeneous.
