Step 1

For cheese, you will need medium fat cottage cheese - about 15%. Add a half teaspoon of baking soda to it, place in a blender and grind until smooth, creamy. If you don't have a blender, you can rub the curd through a sieve.

Step 2

We place the curd in a heat-resistant dish and put it in a water bath. Heat, stirring occasionally, for about 5 minutes. During the heating process, the curd becomes more liquid and viscous. When the whey begins to separate, lower the heating temperature and stir constantly.

Step 3

Stir the egg until smooth, adding salt. Remove the cottage cheese from the water bath and pour the egg into it. Mix thoroughly. Then we put it back in a water bath and heat it, stirring constantly, for about three minutes.

Step 4

When the mass becomes completely homogeneous, soft and viscous, add oil. The more butter there is in the cheese, the denser it will be. If you want to get soft melted cheese, add 50 g. Stir and bring until the butter is completely dissolved.

Step 5

At this stage, you can add a variety of additives to your taste - fried mushrooms, ham, paprika, sun-dried tomatoes, herbs, etc. After adding the fillers, the mass must be held for a little more in a water bath. The longer you heat the processed cheese, the thicker it will become.

Step 6

Lubricate the mold (or just a bowl) with oil, pour the resulting mass into it and cool it at room temperature. Processed cottage cheese is ready to eat hot. Once cooled, it can be stored in the refrigerator for up to two weeks.
