Step 1

Put five hundred grams of fresh country cottage cheese in a saucepan, add half a teaspoon of baking soda and rub thoroughly with the cottage cheese.

Pour half a glass of milk into a saucepan with cottage cheese and mix everything thoroughly, you can even beat it with a blender. Place the pot over low heat.

Take a wooden spoon and, stirring constantly, wait until the curd begins to gradually melt. At this time, add two tablespoons of butter, one teaspoon of salt to the pan (a little more if you want a salty cheese) and spices to your taste. This can be garlic, dill, pepper, or cumin.
