Put five hundred grams of fresh country cottage cheese in a saucepan, add half a teaspoon of baking soda and rub thoroughly with the cottage cheese.

Pour half a glass of milk into a saucepan with cottage cheese and mix everything thoroughly, you can even beat it with a blender. Place the pot over low heat.

Take a wooden spoon and, stirring constantly, wait until the curd begins to gradually melt. At this time, add two tablespoons of butter, one teaspoon of salt to the pan (a little more if you want a salty cheese) and spices to your taste. This can be garlic, dill, pepper, or cumin.

Stir the mixture constantly with a wooden spoon to create a smooth melted cheese.

After the curd has completely dissolved and a homogeneous mass is obtained, remove the pan from the heat and pour it into pre-prepared molds. It is important to pay attention to the fact that the molds must be designed for hot food, otherwise they may melt.
