Instructions

Step 1

Many people do not like onions, but they like to eat this soup. The secret of its preparation is that the onion is cut into very small half rings and boiled during the cooking process. Cut the onion into thin half rings.

Step 2

In a heavy-bottomed saucepan, melt the butter and olive oil. Put onion, chopped garlic and sugar in boiling oil. Fry for 3-5 minutes, then reduce heat and continue cooking for 15-20 minutes. When the onions are golden brown, add the flour. Cook, stirring occasionally, for a minute. Gradually pour in a glass of wine, cook for a couple of minutes, then add hot chicken broth, season with salt and spices. Simmer for about 30 minutes.

Step 3

While the soup is boiling, prepare croutons (croutons). Cut the loaf into long 1 cm wide slices and brown in a dry skillet on both sides. Pour the soup into portion pots, place the croutons on top, sprinkle generously with grated cheese and bake in the oven until golden brown. Sprinkle with finely chopped herbs before serving. The soup will turn out to be rich, hearty and amazingly tasty.
