Stuffed eggs are an everlasting success. Depending on the filling, the dish can be either an exquisite delicacy or a simple, everyday meal. It is ideal for picnics and buffets.
Basic Stuffed Egg Recipe
In order to stuff the eggs, they must first be boiled and peeled. To hard-boil chicken eggs, place them in boiling water and cook for 8 to 10 minutes. The fresher the eggs are, the less they need to be boiled. After the allotted time, cool the eggs under running ice water and remove the shells.
There are two main ways to prepare eggs for stuffing - cut them in half lengthwise, or cut them about a third from the top, from the sharp end. In any case, then you should remove the yolk, prepare the filling and put in the resulting cavity.
Egg fillings
Eggs are filled with cheese, canned and smoked fish, seafood, sausages, and various spices. For the simplest minced meat for 12 chicken eggs, you will need:
- ½ glass of mayonnaise;
- 1 tablespoon of mustard;
- 1 teaspoon of salt;
- ½ teaspoon of Worcester sauce;
- ¼ teaspoon of ground black pepper;
- parsley for decoration.
Rub yolks from 12 eggs through a fine sieve, combine with mayonnaise, mustard, Worcestershire sauce, and season with salt and pepper. Stuff the eggs and garnish with parsley leaves.
Eggs with anchovies will turn out to be spicy. For them you will need:
- 12 boiled eggs;
- 1 clove of garlic;
- 3-4 fillets of anchovy;
- 2 tablespoons of grated Parmesan;
- 3 tablespoons of mayonnaise;
- juice from ½ lemon;
- 1 teaspoon of Worcester sauce
- 1 teaspoon ground black pepper.
Chop the anchovy fillets and garlic, place them in a blender bowl along with the egg yolks, add the parmesan, mayonnaise, lemon juice, Worcestershire sauce, season and blend into a smooth paste. The filling is ready.
In Spain, stuffed eggs are often served as an appetizer - tapas. Try Spanish Tuna Eggs. Take:
- 12 hard boiled eggs;
- 200 grams of tuna, canned in oil;
- 2 tablespoons of chopped red salad onions;
- 2 tablespoons of mayonnaise;
- 1 tablespoon of Dijon mustard;
- 2 teaspoons of lemon juice;
- ¼ teaspoon of salt;
- ½ teaspoon ground spanish smoked paprika.
Drain the excess oil from the can of canned tuna, put the fish in the blender bowl along with the egg yolks. Add the rest of the ingredients and mix into a smooth paste.
Stuffed eggs can be not only a cold but also a hot snack. For one of the options for such a dish, you will need:
- 12 hard boiled eggs;
- 200 grams of ham;
- 4 tablespoons of soft cream cheese;
- 4 tablespoons of sour cream 20% fat;
- 2 teaspoons of Dijon mustard;
- 2 teaspoons of chopped dill greens;
- 1 cup of bread crumbs;
- 50 grams of butter;
- salt and freshly ground pepper.
Chop the ham, place it along with the egg yolks, sour cream, mustard and dill in a bowl. Stir well, season with salt and pepper. Melt the butter. Preheat oven to 170C. Stuff the eggs, cut in half, place them on a baking sheet and sprinkle with breadcrumbs, add butter and bake for 3 to 5 minutes, until golden brown.
