If you like light airy desserts, then you should definitely try making cakes called "Ballerina". Especially this delicacy will appeal to those who are crazy about meringues.
It is necessary
- For the meringue:
- - egg whites - 6 pcs;
- - icing sugar - 250 g;
- - salt - a pinch;
- - lemon juice - 1 teaspoon.
- For the cream:
- - cream 33% - 250 ml;
- - icing sugar - 2 tablespoons;
- - fresh raspberries.
Instructions
Step 1
Chill the egg whites, then combine with salt and beat thoroughly with a mixer until firm foam. Then, without stopping whipping, gradually add powdered sugar to them. When there is 1 minute left before the end of this procedure, add lemon juice.
Step 2
Place the resulting mass in a pastry bag. Squeeze it in the form of a spiral onto a baking sheet lined with parchment, just first form the bottom of a kind of basket - it should be 3 centimeters in diameter. Remember that inside these cakes must be empty. Do this with the entire sugar-protein mass.
Step 3
Preheat the oven to a temperature of 100 degrees and send future cakes to bake in it for about 2-2, 5 hours. During this time, the baskets from the sugar-protein mass should dry out, while remaining light.
Step 4
In the meantime, prepare the cream for the dessert. To do this, combine the pre-chilled cream with powdered sugar. Whisk well. This procedure should be done in a cold metal cup.
Step 5
Put the resulting cream in a pastry bag and fill the cooled baked goods. Decorate the top with a fresh berry, such as a raspberry. Ballerina cakes are ready!
