Ingredients for the crust:

  • 3 chicken eggs;
  • 1 cup full of wheat flour
  • 1 cup full of granulated sugar.

Ingredients for curd soufflé:

  • ½ kg of cottage cheese;
  • 20 g gelatin;
  • 3 tablespoons of powdered sugar.

Ingredients for decoration:

  • ½ kg frozen cherries (pitted);
  • 25 g gelatin;
  • 1 glass of any fruit juice;
  • 1 cup granulated sugar.

Preparation:

  1. The first step is to prepare the cake base. This is quite simple to do. To do this, you need to pour granulated sugar into a deep container and break the eggs. Next, beat them with a mixer. This should be done long enough, about a quarter of an hour.
  2. Carefully pour the pre-sifted wheat flour into the resulting fluffy mass. All ingredients are thoroughly, but very carefully mixed.
  3. Cover the baking dish with parchment paper. Then the resulting dough is carefully transferred into it. Place the mold in a preheated oven. After the surface of the cake has acquired a bright golden hue, it can be removed from the oven. The cake should cool in the form.
  4. After the finished cake is taken out, the bottom and sides of the mold should be covered with foil (food grade). After that, the cake is placed back in the mold.
  5. Prepare a curd soufflé. To do this, dissolve gelatin in half a glass of hot water.
  6. Put the cottage cheese in a separate container and add the powdered sugar. After these ingredients are thoroughly mixed, prepared gelatin should be added to them. Mix everything thoroughly.
  7. The resulting soufflé should be covered with an even layer. Then it is placed in the refrigerator for 60–90 minutes so that the soufflé is completely frozen.
  8. To decorate the cake beautifully, you need to mix gelatin with not very much cool water. Next, you need to defrost the berry. Pour granulated sugar into a small saucepan and pour the juice. Put on fire. After the liquid boils, remove the saucepan from the heat. Gelatin is poured there. Everything is thoroughly mixed and left to cool completely.
  9. A berry is laid on top of the soufflé, and then everything is poured into jelly. The cake is placed back in the refrigerator. After the jelly hardens, the dessert can be served.
