Dozens of different dishes can be prepared from cottage cheese. Desserts with cottage cheese turn out to be very tasty - especially if you supplement them with seasonal berries and fruits. Try baking a fluffy cherry curd pie - it can be served with a family or holiday table.

For the dough: - 200 g flour; - 0.5 cups of sugar; - 0.5 teaspoon of baking soda; - 80 g of butter; - a pinch of salt; - 1 egg. For the filling: - 500 g cherries or cherries; - 500 g of cottage cheese; - grated zest of 1 lemon; - 1 teaspoon of cinnamon; - 1 teaspoon of vanilla sugar or a pinch of vanillin; - 0.25 cups of peeled almonds; - 50 g of starch; - 0.5 cups of sugar; - 3 eggs; - 0.5 teaspoon of baking soda; - icing sugar for decoration

Cherry curd pie has a moderate calorie content - it can be recommended for the nutrition of children and those who follow a diet. For a delicious dessert, buy ripe cherries and fresh, not too dry cottage cheese. The taste of the pie should be delicate and rich enough, so it is better to choose a fatty dairy product.

Curd dough for pie
Combine flour, baking soda, salt and sugar in a deep bowl. Add softened butter and egg to the mixture. Knead soft dough and refrigerate. Cover the container with plastic wrap to prevent the dough from drying out.

Prepare the filling. Sort ripe cherries or cherries, cut off the branches. Rinse the berries and pat dry on a towel. Carefully separate the yolks from the whites. In a bowl, mash the cottage cheese with sugar and egg yolks. Add ground cinnamon, grated lemon zest, vanilla sugar or vanillin, baking soda and starch. Toast the almond kernels, cool and grind them in a mortar. Add chopped nuts to the curd mass.

Remove the dough from the refrigerator and roll it into a layer on a floured board. Lubricate the detachable form with oil and put a layer of dough into it, making sides along the edges.

In a separate container, beat the egg whites until they are firm. Stir in the cherries into the curd mixture, and then add the proteins in portions, stirring the mass from bottom to top. A properly prepared filling for a cherry curd pie should be airy and not too runny.

Making a curd cake with cherries
Place the filling on the prepared dough, gently level the surface with a knife. Place the dish in the oven, preheated to 200 o C. Bake the cake for about an hour, covering the surface with foil - this is necessary so that the dessert does not burn. Remove the finished curd cake with cherries from the oven, put on a board and refrigerate.
Step 7
Cut out stencils of cherries from paper and spread them over the surface. Sprinkle the icing sugar over the surface of the cake and then remove the stencils for a beautiful cherry pattern. Cherry curd pie is delicious with tea or coffee. It can be served with whipped cream or chilled vanilla sauce.
