Delicate cottage cheese and delicious cherries perfectly complement each other, creating an amazing sensation of light bliss. There is no strength to resist this delicacy.
It is necessary
- For sand crumbs:
- - 700 g flour;
- - 100 g of sugar;
- - 1 egg;
- - 1/4 tsp soda, quenched in vinegar;
- - 200 g of butter.
- For the curd filling:
- - 3 eggs;
- - 100 g of sugar;
- - 750 g of low-fat cottage cheese (ricotta is possible);
- - 75 g softened butter;
- - 3 tbsp. decoys;
- - zest of 1 lemon;
- - 30 g starch;
- - 1/2 tsp soda;
- - 1 vanilla pod.
- For berry filling:
- - cherry jam or freshly pitted cherries.
Instructions
Step 1
Cut the butter into pieces with a knife. Add flour to it and rub with your hands until an equal mass is formed. Add sugar, egg, vinegar-slaked soda and lemon zest. Grind the resulting mixture with your hands again and put in the refrigerator for 1 hour.
Step 2
Mash the cottage cheese until a single mass is formed. Add eggs and sugar to the curd, beat until the components turn into a creamy structure. Stir in softened butter, semolina, starch, vanilla and baking soda to the mixture.
Step 3
Preheat oven to 180 degrees. Place parchment paper in a baking dish. Put half of the sand crumbs into the mold. Cover with a layer of cherry berries. Lay out a layer of curd mass. Cover the curd filling with the remaining sand crumbs.
Step 4
Place the dish in the oven for 25-30 minutes. Remove the cake and let it sit for 30 minutes, otherwise it may crumble when removed. Gently transfer the cake to a platter.
