  • 2. Curd cheese (without additives) - 100 grams
  • 3. Egg yolk - 2 pieces
  • 4. Vanilla sugar - 2 tablespoons
  • 5. Flour - 2 rounded tablespoons + for forming
  • 6. Butter 82, 5% - for frying
  • 7. Fresh berries - for serving
  • 8. Sour cream, jam or condensed milk - for serving

Instructions

Step 1

Mix curd and curd cheese before combining. It is better that all the ingredients are at room temperature, so it will be easier to mix them into a homogeneous mass.

It is assumed that a blender can be used to achieve a combination of curd and curd cheese.

But all other ingredients should be mixed with a spatula.

Step 2

Add egg yolks and sugar to the curd mixture, mix until smooth. Then add flour. I recommend using wheat flour without substituting for other types. The recipe is calculated for a certain type of flour, if you decide to change the flour, then I cannot guarantee you an excellent result for this recipe.

Stir the mixture with flour until combined. The mass must be dense.

We only use yolks to achieve a smoother and silky texture. If you only have 1 egg, use 1 whole egg instead of 2 yolks.

Step 3

We heat a frying pan on the stove, drown butter in it.

With wet hands we form cheese cakes and lightly roll in flour. Put in a skillet, put on medium heat. Do NOT cover with a lid.

If you are not going to cook all the cheesecakes at once, then you can freeze them. To do this, we form cheesecakes with wet hands, lightly roll in flour and put on a cutting board. So we send it to the freezer until it solidifies, then you can transfer it from the board to a bag and put it in the freezer. Store no more than three weeks.

Step 4

Cook on one side for about 7-10 minutes, then turn over to the other side and bring to readiness.

Remove from heat and immediately serve with fresh berries, jam, honey, sour cream or condensed milk. These cheesecakes are very tasty to eat hot, but after cooling they become no worse!
