Many delicious and interesting dishes can be prepared from eggplants. This vegetable is fried over an open fire, skillet, baked in foil and boiled in a saucepan. In general, there are a lot of cooking recipes. But there are not so many options for how to make eggplants for those who, for example, observe the Orthodox fast or are vegetarian. Let's try to fill the gap.
It is necessary
- - Eggplant - 1 pc.;
- - fresh tomatoes of a small size - 2 pcs.;
- - garlic - 2 cloves;
- - vegetable oil - 1 tsp;
- - greens to taste;
- - seasonings to taste.
Instructions
Step 1
So, if you observe an Orthodox fast, are a vegetarian, or just carefully monitor your figure, then this eggplant recipe will suit your taste. Let's start cooking.
Step 2
Wash the eggplants well, cut off the “tails” on both sides and cut into slices as thin as possible. Wash the tomatoes, remove the inedible parts and cut into thin slices.
Step 3
Pour vegetable oil into a preheated pan and fry vegetables in it. It is necessary that the eggplants and tomatoes are well browned, but not burnt. If you do not eat food prepared by the frying method, then bake the vegetables in the oven. To do this, heat it up to 180 degrees and place there chopped tomatoes and eggplants, previously greased with vegetable oil. It will give the vegetables a beautiful flavor. Cooking time is 10-15 minutes, but it is better to focus on the appearance of vegetables. They should turn golden.
Step 4
Transfer the fried or baked eggplants to a large, flat plate in one layer. For each circle of purple vegetable, place a circle of tomato. Spread the garlic passed through a press on top. Sprinkle everything with chopped herbs and salt to taste. Place the lid on the eggplant dish and refrigerate for at least 60 minutes. The dish is ready. These vegetables go well with potatoes and any other side dish.
