If you are on a diet or just a fan of proper nutrition, then pumpkin pie is sure to taste. For the sake of fairness, it should be noted that pumpkin, although it is a vegetable, has a sweet pulp and is great for making desserts.
Pumpkin casserole
To prepare this amazingly aromatic dish, we need:
- 4 eggs;
- half a glass of sugar;
- a pinch of salt;
- 750 grams of grated pumpkin;
- one and a half tablespoons of wheat flour;
- five tablespoons of semolina;
- teaspoon of baking soda, slaked with vinegar
Whisk the whites with sugar and salt, mix the grated pumpkin pulp with the yolks, after draining the excess liquid from the pumpkin. Then add slaked soda, flour, semolina, lemon zest, cinnamon, vanilla to taste into this mixture. We introduce proteins last.
Mix the ingredients thoroughly. Pour the dough into a mold and bake in a well-heated oven for 35-40 minutes. This casserole is good both hot and cold.
Pumpkin Pancakes
Quite an original and simple dish. To make pancakes, prepare 400 grams of pumpkin pulp, 200 grams of flour, a glass of milk, a couple of eggs, two tablespoons of sugar, baking soda or baking powder, honey and salt. Bake the pumpkin in the oven, make mashed potatoes with a blender. Beat eggs with sugar and mix with pumpkin puree, add salt, mix thoroughly and drain the milk. The last step is to add flour, knead the dough and add baking powder. Pancakes should be fried in a dry skillet and served with honey.
Pumpkin mousse
Boil 300 grams of pumpkin or bake and mash, beat the whites of two eggs with sugar and mix with pumpkin puree, add lemon zest and vanillin. Put the mass in several small forms and drink in the oven for about half an hour.
