Jerusalem artichoke is a storehouse of vitamins and other substances useful for the body. Its tubers can be eaten raw or used in various dishes, but even when cooked, it does not lose its nutritional value and healing properties. By adding carrots to Jerusalem artichoke, you can make delicious pancakes.

- 4-5 Jerusalem artichoke tubers;
- 2-3 medium carrots;
- 2 eggs;
- 2 tbsp flour;

- 100 g sour cream 10-15% fat;

Instructions
Step 1
Rinse the Jerusalem artichoke tubers thoroughly with a vegetable brush. Cut off the tips and remaining roots. The knotty shape makes it difficult to peel the tubers, but you can do the following: immerse them in boiling water for a few minutes, and then in cold water, then scrape off the skin with a knife.
Step 2
Place the peeled tubers in cold water for a short time, add citric acid at the tip of a knife. This is necessary so that Jerusalem artichoke does not acquire a bluish tint.
Step 3
Wash and peel the carrots. It is enough to scrape young fruits with a knife, and from old fruits you need to cut off the skin. Remember to remove the top and bottom tips of the fruit.
Step 4
Grate the Jerusalem artichoke and carrots on a fine grater, combine in a bowl and stir. Beat eggs lightly, season with salt, add to vegetables and stir again. Add pre-sifted flour. Keep in mind that its amount can vary up or down, since it depends on the properties of the flour itself, so when kneading, focus on the thickness of the dough.
Step 5
Put the resulting mass in a pan with heated vegetable oil, fry the pancakes over low heat for 5-7 minutes on each side. Remove the finished pancakes from the pan, put on a plate and serve with sour cream or sauce: hard-boil 2 eggs, separate the yolks, grind them with sour cream or natural yogurt, salt and mix well.

Jerusalem artichoke and carrot pancakes will acquire a spicy taste if you add finely chopped onions or garlic to the dough. A grated apple can give an unusual touch. But in any case, the consistency of the dough will turn out to be thinner, so do not forget to increase the amount of flour.
Step 7
Keep in mind that eating Jerusalem artichoke can sometimes cause flatulence, so it is recommended to add herbs (dill, parsley, cilantro) to dishes with it, as well as various spices and seasonings (cumin, coriander, cloves, etc.), which for pancakes, it can be used as part of a dough or sauce.
