It is necessary
- - 500 ml of vegetable oil;
- - 150 gr. bread crumbs (it is advisable to use Japanese panko crackers);
- - 100 gr. unsweetened coconut flakes;
- - 500 gr. tiger prawns;
- - any coarse salt and freshly ground black pepper;
- - 60 gr. flour;
- - 2 eggs;
- - sweet chili sauce for serving (optional).
Instructions
Step 1
Heat the oil in a heavy-bottomed saucepan or deep fryer. In a bowl, mix together the bread crumbs and coconut.
Step 2
Peel the shrimps, leaving the tail, salt and pepper to taste. Beat eggs. Dip the shrimp in flour, then dip in eggs and roll again in a mixture of bread crumbs and coconut.
Step 3
We send shrimps in small batches in oil for literally 2-3 minutes, so that they become golden and crispy. Transfer to a paper towel with a slotted spoon.
Step 4
Serve the shrimp immediately. This dish is best paired with a sweet chili sauce.
