Coconut flakes are a simple product, but dried coconut still loses in taste to coconut flakes prepared at home from fresh fruit.

Step 1
First you need to choose the right coconut, which will have good taste and a fairly fatty pulp. To select a coconut, just bring the fruit to your ear and shake gently. If the coconut is good, then you will hear a splash, if this does not happen, then feel free to put the fruit aside - it does not suit us, as it is already overripe, which means that its pulp is dry with a taste of soap.
Step 2
Now the coconut needs to be peeled from the hard brown shell. To do this easily, tap the entire surface of the fruit with a small force with a hammer. This is necessary so that the pulp separates more easily. Take a knitting needle and pierce one of the three coconut eyes. Two eyes are very hard, and the third is certainly soft, we find it and pierce it with a knitting needle. Drain the liquid carefully - it can be added to the coconut milk.
Take a large knife and tap the back of the coconut across the fruit.
This action may need to be repeated 2-3 times until a visible crack appears.
If the fruit was tapped well at the very beginning of the process, now the pulp will easily separate from the shell. Use a sharp knife or peeler to remove the brown skin from the flesh.
Step 3
Now you can start making coconut flakes from fresh coconut. Grate the pulp on a coarse grater or cut into thin pieces. Pour the chopped pulp with cold water, taking it no more than half a liter. Now use a blender to blend the flesh of the coconut.
Take a cheesecloth or strainer and strain the mixture, separating the coconut milk from the wet coconut flakes. Dilute the milk with water, topping it up in a volume of about 1 liter, add to the milk the liquid that was drained from the fruit at the beginning of the process. This is a by-product of making coconut flakes, and it is very tasty and healthy.
Step 4
Well-squeezed, but still damp coconut flakes can be used already in this form, or you can dry it for future use by spreading it out in a layer and leave it to dry in the air or using a dehydrator (dryer for fruits and vegetables).
