Garlic mashed potatoes, or scordaglia, is a traditional Greek hot appetizer that is also recommended to be served as a side dish with meat, vegetable or fish dishes. This garlic snack is prepared from elementary foods and is especially indispensable during fasting.

It is necessary

  • -5-6 medium potatoes
  • -1 large lemon
  • -8 cloves of garlic
  • -coarse salt
  • -0.5 Art. olive oil

Instructions

Step 1

Wash the potatoes thoroughly and boil them in their skins until tender (this will take about 25 minutes). Rinse the lemon and squeeze the juice out. Peel the garlic, chop it a little, and then crush it with a little salt in a mortar.

Step 2

Peel one potato and mash it with garlic until smooth, adding olive oil and lemon juice. Repeat the process one by one with all remaining potatoes.

Step 3

Cook the puree as quickly as possible so that the potatoes do not cool down, otherwise it will be more difficult to achieve a uniform composition without lumps. Serve as hot as possible and season with a little salt if necessary.
