Berry season is a great excuse to bake pies. One of the tastiest options is raspberry shortbread. Try to diversify your usual recipes and prepare an original dessert with fresh raspberries and chocolate cream.

  • For the test:
  • - 0.75 cups of wheat flour;
  • 1/3 cup cornstarch
  • - 1/3 cup powdered sugar;
  • - 100 g of butter;
  • - 1 teaspoon of vanilla sugar;
  • - salt.
  • For filling:
  • - 1.5 cups fresh raspberries;
  • - 0.5 cups heavy cream;
  • - 200 g of dark chocolate;
  • - 1 teaspoon of vanilla sugar;
  • - 2 tablespoons of butter.

Instructions

Step 1

To make a shortcrust pastry with raspberries, you will need smooth, unwashed berries. A pie filled with a mixture of berries of different colors will turn out to be very beautiful.

Step 2

In a deep bowl, combine flour, starch, icing sugar and vanilla sugar. Add oil and crush the mixture into crumbs. Roll a ball out of the dough, wrap it in plastic wrap and put it in the refrigerator for half an hour.

Step 3

Remove the dough and roll it into a round layer on a floured board. Line the baking sheet with baking paper and place the crust in it. Use a fork to pierce its surface in several places. Place the batter in the freezer for 10 minutes. Then put it in an oven preheated to 200 C and bake until golden brown. Remove the cake carefully from the mold and refrigerate on the board.

Step 4

Prepare a cream pie filling. Pour the cream into a saucepan, add the butter, cut into pieces. While stirring, heat the contents of the saucepan until it boils. Remove the butter and butter mixture from the heat, add the vanilla sugar and chopped chocolate. Stir everything well - the mixture should become smooth and shiny.

Step 5

Pour the chilled crust evenly with hot chocolate cream. Sprinkle the surface of the pie with raspberries and put the dessert in the refrigerator for half an hour. Serve by cutting the dessert into pieces. Raspberry shortbread is delicious with melted vanilla ice cream or whipped cream.
