Uzvar is a drink made from fresh or dried fruits that is popular in Ukrainian cuisine. It is much more concentrated than ordinary compote, it includes a variety of spices and honey. In order for the uzvar to acquire the desired taste, after cooking it is infused in a cold place for 2 to 5 hours.
It is necessary
- Pear Uzvar:
- - 2.5 liters of water;
- - 700 fresh pears;
- - 200 g seedless raisins;
- - 1 cup of sugar;
- - 3 tbsp. spoons of honey;
- - 8 carnation buds;
- - 1 teaspoon of cinnamon;
- - 0.5 tsp of citric acid;
- - 2 teaspoons of lemon zest.
- Dried fruit Uzvar:
- - 1.25 liters of water;
- - 50 g of dried apples;
- - 50 g of dried pears;
- - 50 g of raisins;
- - 50 g cherries;
- - 50 g of prunes;
- - 0.5 cups of sugar;
- - 0.5 cups of honey;
- - 4 carnation buds;
- - 0.5 lemons;
- - 0.5 tsp of cinnamon;
- - 1 teaspoon lemon zest.
- Fresh berry Uzvar:
- - 1.25 liters of water;
- - 1 cup of sugar;
- - 500 g of fresh berries;
- - 0.5 lemons;
- - 0.5 teaspoons of ground cinnamon;
- - 0.5 teaspoons of ground cloves;
- - 3 tbsp. spoons of honey.
Instructions
Step 1
Decide what kind of drink you want to make. Uzvar can be cooked from one type of fruit with the addition of raisins. These drinks have a softer taste. There are also prefabricated uzvars, for the preparation of which they use pears, apples, cherries, plums, dried prunes and fresh berries. Try adding blueberries, strawberries or raspberries to the drink - the uzvar will acquire an unusual and very pleasant taste. Modern recipes include more original ingredients such as dried rose hips or fresh chokeberries. Experiment by inventing your own flavor combinations based on classic recipes.
Step 2
Pear Uzvar:
Take ripe sweet pears, rinse them in warm and then cold water. Peel the fruit, remove the seeds, cut the pears into pieces. Cover them with sugar, leave for half an hour. Pour boiling water over the pears, place on the stove, bring to a boil and cook for 5 minutes. Then add the raisins and continue cooking. After 10 minutes, add the lemon zest, citric acid, cinnamon, clove buds, and honey to a saucepan. Stir everything, boil for another 5 minutes. Remove the pan from heat and leave in a cool place for about 5 hours.
Step 3
Dried Fruit Uzvar
Rinse dried fruit thoroughly in multiple waters. Pour water into a large saucepan, add sugar and place on the stove. While stirring, let the sugar dissolve, bring the water to a boil and skim off the foam. Put the dried pears in the syrup, add apples after 5 minutes, add dried cherries, raisins and prunes after another 5 minutes. Reduce heat and simmer for 15-17 minutes. When the fruit is tender, add the cloves, lemon zest and ground cinnamon. Squeeze the juice from half a lemon and pour it into a saucepan too. Cook the uzvar for another 5 minutes, and then remove from the stove. Add liquid honey to a saucepan and mix well. Let the drink cool at room temperature and then refrigerate for 2-3 hours.
Step 4
Fresh berry Uzvar
Sort the strawberries, raspberries and blueberries, remove the spoiled ones. Rinse the berries in several waters and discard in a colander and put in a saucepan, add sugar and leave for 20 minutes. Boil water in a separate container, pour boiling water over the candied berries and put them in an oven heated to 160 ° C for half an hour. Add honey, spices and freshly squeezed lemon juice to the hot uzvar. Let the drink sit in a cool place for about 2 hours, then strain and refrigerate.
