If you want to try fried chanterelles with garlic, then first thoroughly rinse the mushrooms from the ground and branches, and then take a knife and cut the large chanterelles into pieces with it. Small mushrooms do not need to be cut. Pour water into a saucepan, bring it to a boil and dip the chopped chanterelles into it. Boil the mushrooms for about 15-20 minutes, then drain the water from the pan.
Step 2
While the chanterelles are boiling, cut the pre-peeled and washed onions into half rings or rings. Take garlic, peel it, rinse it and cut into slices. Pour vegetable oil into a skillet, add chopped onions and garlic and sauté them over low heat until the onions are tender. Once this has happened, add the boiled mushrooms to the vegetables, turn the heat up slightly and fry them over medium heat for about 20 minutes. The readiness of this mushroom dish can be determined by the color - the color of the finished chanterelles becomes brighter, and the onion fades and becomes almost invisible in the pan. Salt the mushrooms to taste and keep them on fire for another 2-3 minutes. If desired, 2-3 drops of lemon juice can be dripped into the finished dish - this will give it a special piquancy. Before serving, it is recommended to decorate fried chanterelles with garlic with herbs to taste.

In order to enjoy fried chanterelles in sour cream, first follow the same sequence of cooking mushrooms as in the first recipe, but exclude garlic from the ingredients - before adding mushrooms to the pan, fry only onions in it in vegetable oil. 3-5 minutes before the chanterelles are ready, add sour cream to the pan, not forgetting to salt the dish to taste before that. Fry the mushrooms in sour cream for another 2-3 minutes, then turn off the heat. Put the chanterelles fried in sour cream on a beautiful dish, sprinkle them with pre-washed and finely chopped dill and parsley and serve.
