  • - 150 ml of milk
  • - 2 g vanillin
  • - 80 g butter
  • - 400 g cherries
  • - 100 ml cherry juice
  • - 1 tbsp. starch
  • - 400 ml cream
  • - 200 g dark chocolate
  • - 400 g of Maltersers sweets
  • - 8 g gelatin

Instructions

Step 1

Make a biscuit. First, beat the whites into a firm foam. Then add cocoa powder, 90 g granulated sugar, flour, mix until smooth and knead the dough. Cover the baking sheet with baking paper and lay out the dough, flatten. Place in an oven preheated to 180 degrees, bake for 25-30 minutes. Check readiness with a match. Remove the finished biscuit from the oven and leave to cool.

Step 2

Make a custard. Grind the granulated sugar and yolks until white. Then add 1 tbsp. flour, vanillin, milk and mix everything well. Put on low heat and brew the cream. When the cream gurgles, it is ready. The cream will turn out to be thick, similar in consistency to thick sour cream. Remove from heat and cover with cling film, cool. Add butter to the cooled cream and beat well. Refrigerate the cream for 1-2 hours.

Step 3

Make chocolate mousse. Heat 100 ml cream, add the chocolate wedges and let stand for 2-3 minutes. Then stir everything until smooth.

Step 4

Soak gelatin in ice water. Then squeeze it out and dissolve in 3 tablespoons. heated cream. Whip 300 ml of cream until steep peaks and combine with chocolate mass, add gelatin and stir until smooth.

Step 5

Lubricate the biscuit with cream.

Step 6

Heat the cherries and 100 ml of juice, add the starch and stir. You should get a gelatinous cherry. Cool the mixture and pour over the cream.

Step 7

Then pour the chocolate mousse over the cake. Cover with cling film and refrigerate for 6-8 hours or overnight. Decorate the cake with Maltersers candies.
