Instructions

Step 1

Prepare the dough. Put softened butter and icing sugar in a large bowl. Beat with a mixer on high speed for 3-4 minutes.

Then, reducing the speed to medium, add the egg and continue beating until smooth. Sift flour, baking powder, salt together.

Add the flour mixture to the egg-oil mass, stirring at low speed until the components are combined. Wrap the dough with cling film, form a flat disc and refrigerate for 30 minutes.

Make a Kurd. Rinse the lemons thoroughly and pat dry with a paper towel. Remove the zest from one lemon using a special grater.

Squeeze the juice from both lemons. Pour 80 ml of juice into a saucepan, add zest, granulated sugar. Heat the lemon mixture over medium heat until steam appears above the surface.

Combine egg and yolks in a separate bowl, stir well. Pour half of the hot lemon juice into the egg mixture, stirring vigorously with a whisk.

Then pour the mixture back into the saucepan and continue cooking over low heat until thickened. Remove the saucepan from the heat, add the sliced butter.

Stir until evenly thick, covered with cling film close to the surface so that a crust does not form, cool to room temperature.

Roll the chilled dough between 2 sheets of baking paper into a thin layer. Transfer neatly to the mold, forming the sides. Prick the bottom with a fork and place in the freezer before baking.

Preheat oven to 190 ° C. Bake the base for 15-17 minutes until golden brown. After cooling the finished dough base in the form, transfer to a dish. Place the Kurd on the base and garnish with fresh blueberries.
