Blueberry pancakes themselves are tasty and bright. And the curd-blueberry filling is a great addition to pancakes, which is very easy to make from berries, curd cheese and sour cream.
It is necessary
- For pancakes:
- - 250 ml of milk;
- - 150 g blueberries;
- - 100 g flour;
- - 80 g of sugar;
- - 4 eggs;
- - 2 tbsp. tablespoons of vegetable oil;
- - baking powder, salt.
- For filling:
- - 250 g of curd cheese;
- - 200 g blueberries;
- - 150 g sour cream;
- - 1 tbsp. a spoonful of vanilla sugar;
- - regular sugar to taste.
Instructions
Step 1
First, let's prepare the pancakes ourselves. To do this, beat eggs with 50 g of sugar, add flour with baking powder, salt, pour in milk and whisk until smooth.
Step 2
Grind the blueberries with 30 g of sugar in a food processor, add this puree to the pancake dough, add the vegetable oil and mix thoroughly. You can even take frozen blueberries.
Step 3
From the resulting dough, fry thin pancakes in a well-heated frying pan on both sides. Put the finished pancakes on a plate in a stack.
Step 4
Now let's prepare the filling. Add sour cream, plain and vanilla sugar to the curd cheese, mix thoroughly. Divide the cream into two equal parts. Add 100 g of chopped blueberries to one part of the cream, leave the other intact.
Step 5
Take a pancake, grease it with sour cream and curd cream, and on top of it - curd and blueberry. Place whole blueberries on the edges of the pancake and roll. Repeat this process with all the blueberry pancakes until they and the cream run out.
Step 6
Serve blueberry pancakes with cottage cheese-blueberry filling for tea - they can become a real dessert, you won't immediately understand that these are ordinary pancakes.
