Unusual pancakes filled with cream cheese and raisins, covered with heavy cream will surprise you with their excellent taste! They can be served warm or cold.

- - 2 tablespoons vanilla sugar

- - 2 eggs
- - 1 cup of milk

- - 1 tablespoon rum or brandy

- Filling:
- - 450 g cream cheese
- - 1/2 cup sugar
- - 1 teaspoon vanilla extract
- - 1/2 lemon (finely grated zest)
- - 100 g raisins (soaked in rum or cognac)
- - 1 cup of cream
Instructions
Step 1
First, prepare the pancake dough. To do this, combine flour, vanilla sugar and salt in a large bowl. Then add eggs gradually and mix on a slow speed with a mixer, gently adding milk.

Finally, add ghee and 1 tablespoon of rum. The dough is now ready. From it, start baking pancakes as usual.
Step 3
Now you should prepare the filling. Whisk together the cream cheese and granulated sugar on a high speed mixer until all dissolved. Then add the vanilla extract and beat for a couple of minutes. Next, mix by hand with lemon zest and raisins.
Step 4
Divide the resulting filling into equal parts depending on the number of pancakes. For example, if you got 8 pancakes, then you should divide the filling into 8 equal parts. Place the filling on the bottom of the pancake, wrap the edges slightly on the left and right sides and fold gently.
Step 5
Place these filled pancakes in a baking dish. Then pour the cream into the pancake pan as shown in the photo. Place in a preheated oven and bake at 200 ° C for 15-20 minutes.
