Delicious, almost delicate pancakes with milk are a great reason for a family tea party! They go well with both sweet and meat fillings, or even fish ones.
Such pancakes can be simply greased with butter and sprinkled with sugar! This is delicious!

Prepare all the ingredients in advance, they should all be at room temperature. The butter can come from the refrigerator, as we only use it for frying.

Combine eggs with sugar and salt. Beat until the volume increases by 2-3 times. The mixture should become creamy white, airy and fall off the corolla with a beautiful ribbon, in no case should it drip! If it flows down, then you need to beat more.
Step 3
Switch the mixer to the minimum speed and start adding milk. We do this gradually, stirring well.
As all the milk has been poured, then mix at minimum speed until the egg mixture and milk are completely combined.
Step 4
Continuing to stir at the minimum speed, we begin to introduce flour in 3 doses. Mix well each time and make sure that there is no lump formation.
Step 5
After adding all the flour to the dough and stirring well, add 2 tablespoons of vegetable oil directly to the dough and mix well again. Leave the dough to rest for 15 minutes.

While our dough is resting, we will prepare a frying pan: for this we wash the frying pan, wipe it dry and put it on the stove, turning on a strong fire. Let's ignite, and make the fire on medium. Lubricate the pan with butter (you can use soft butter. To do this, put the required amount of butter in a bowl and leave it on the table overnight. When you bake pancakes, you need to grease the pan with soft butter, using half an onion).
Step 7
When the dough is rested, the pan should be ready. Then we take a ladle of dough, pour it into the center of the pan, and distribute our dough over the entire surface.
When the top of the pancake stops shining and becomes dull, then turn the pancake over. On the other side, fry for about 30 seconds and remove from heat.
At this stage, if you do not plan to use meat or fish filling, you can grease each pancake with butter and sprinkle with sugar.
