Vegetable stew with meatballs is a quick and healthy dinner option for the whole family. The dish is prepared in just 40 minutes. Plus, it has some flexibility. After all, the set of vegetables can be changed and supplemented to your liking. The cooking principle will remain unchanged.
It is necessary
- - Any minced meat (chicken, pork and beef) - 500 g;
- - Potatoes - 5 pcs.;
- - Large onions - 1 pc.;
- - White cabbage - 400 g;
- - Carrots - 2 pcs.;
- - Tomato juice - 200 ml (1 glass) or tomatoes in their own juice - 1 jar;
- - Ground black pepper;
- - Salt;
- - Sunflower oil for frying;
- - Deep frying pan with a lid.
Instructions
Step 1
First, peel potatoes, onions and carrots and rinse them in cold tap water. Then chop the potatoes into small cubes, and chop the onion into the same cubes or half rings. Cut the carrots lengthwise into 4 pieces and cut into a quarter-circle so that each piece is at least 3 mm thick.
Step 2
Take a deep frying pan, pour sunflower oil into it and heat it. Then add the potatoes and fry them for 5-7 minutes, stirring occasionally.
Step 3
Meanwhile, remove the top leaves from the cabbage, chop it and add to the potatoes. Stir, then reduce the temperature to medium, cover and simmer while the rest of the ingredients cook.
Step 4
Pour oil into another small skillet, heat and add chopped onions and carrots. Fry them until golden brown. Then add the tomato juice (which can be made from 2 tablespoons of tomato paste in a glass of water). If you have tomatoes in their own juice, transfer them to a skillet and mash with a fork. Sprinkle with black pepper, salt and add 150-200 ml of water. Mix everything together and bring to a boil.
Step 5
After that, transfer the contents of the pan to the cabbage and potatoes, stir and continue to simmer at low temperature, covered.
Step 6
Rinse the empty skillet where the fried was, and set it aside for now. It was the turn to do minced meat. To do this, place it in a bowl, add salt and black pepper to taste, and then shape the meatballs of any size.
Step 7
Pour some oil into the washed skillet, and once it is well heated, transfer the meatballs and fry them on all sides at maximum temperature. When they are golden brown, place them in a skillet with vegetables and simmer until tender under a closed lid.
Step 8
Serve the meatball vegetable stew in bowls with fresh chopped herbs.
