Vegetable stew is a delicious and nutritious dish that will add variety to your menu if you're fasting or dieting. In addition, such a dish will be a great addition to meat or fish, because it can be served as a side dish. Coarsely chopped vegetables will take very little cooking time. And you also don't have to stand at the stove for a long time, because vegetables are cooked very quickly, which preserves their vitamins and useful properties as much as possible.

It is necessary

  • - potatoes - 6-7 pcs.;
  • - large onions - 2 pcs.;
  • - carrots - 1 pc.:
  • - pumpkin - 200 g;
  • - red bell pepper - 1 pc.;
  • - eggplant - 1 pc. (can be replaced with zucchini);
  • - garlic - 3 cloves;
  • - thick tomato juice - 3 glasses or tomatoes in their own juice - 0.5 l;
  • - sunflower oil - 100 ml;
  • - ground black pepper;
  • - red hot pepper;
  • - salt;
  • - fresh cilantro - a few twigs;
  • - fresh parsley - a few branches;
  • - 2 pans.

Instructions

Step 1

Peel potatoes, onions, pumpkin and carrots. Divide the potatoes into 6-8 parts, cut the onion into half rings, the pumpkin into medium-sized cubes, and the carrots into circles.

Step 2

Remove the husk from the garlic and cut it into 4 pieces. For bell peppers and eggplant, cut out the stem and chop them into pieces of arbitrary shape, but not very small.

Step 3

Now take 2 pans and pour a little sunflower oil into each of them. When it warms up, put onions and carrots in one pan, fry them until golden brown. And in the other, deep, put the potatoes and fry them until they soften a little.

Step 4

When the onions and carrots are ready, add the rest of the ingredients to them - pumpkin, bell pepper and eggplant, which also need to be lightly fried.

Step 5

Now transfer the contents of the first pan to the second to the potatoes, pour everything over with tomato juice (or tomatoes in juice), bring to a boil, add 2-3 pinches of red hot pepper (optional). Tie the sprigs of cilantro and parsley with a string and place them in the pan to add extra flavor to the dish. And then reduce the temperature to a minimum and cover with a lid.

Step 6

The cooking time for the vegetable stew is about half an hour. Add salt, black pepper and chopped garlic 5 minutes before the end. As soon as the food is ready, remove the bunch of greens from the pan and discard. After that, the stew can be served immediately, divided into portions. If desired, sprinkle each of them with fresh chopped parsley or dill.
