Vegetable stew is a bright and light dish that will be a great addition to your menu. It can be cooked without meat, and the amount of vegetables and their proportions can be changed at your discretion.

- zucchini - 2 pcs.;
- tomato - 4 pcs.;
- onion - 1 pc.;
- bell pepper (sweet) - 1 pc.;
- garlic - 4 cloves;
- salt

- parsley;
- vegetable oil - 3 tbsp. l.;
- sour cream - 3 tbsp. l.
Instructions
Step 1
Scald the tomatoes with boiled water and peel them off. Cut the pulp into small pieces. Peel all other vegetables, cut potatoes into slices, onions into half rings, carrots, zucchini and peppers into cubes.
Step 2
Grease the cauldron with oil, put potatoes on the bottom and cover with vegetables. Add spices and salt to taste. Pour in butter and sour cream. Stir gently, cover and put on low heat. Simmer for 1 - 1, 5 hours. Sprinkle the finished dish with fresh herbs.
Step 3
If you want more sauce, add some water to the vegetable stew.
