Only in summer you can truly enjoy all kinds of fruits and vegetables, from which you can prepare many healthy dishes. One of them is this vegetable snack.

Ingredients:

  • Zucchini - 2 pcs;
  • Yellow bell pepper - 1 pc;
  • Fennel - 1 tuber;
  • Cherry tomatoes - 100 g;
  • Celery - 2 stalks;
  • Juniper - 4 berries;
  • Razmarin - 1 branch;
  • Olive oil - 6 tablespoons.

Preparation:

  1. Before starting, we thoroughly rinse all the vegetables under running cold running water, then pour over them with boiling water and peel them with a sharp knife.
  2. Next, we start cutting vegetables: we cut zucchini into longitudinal slices over the entire area of the vegetable, and fennel and pepper into strips.
  3. Then we cut the tomatoes in half, and the celery stalks - into beautiful small cubes.
  4. Then we combine all vegetables, salts and pepper to taste. We put this mixture on portioned plates, or even better in small bowls, it will look even more beautiful.
  5. Rub the juniper berries thoroughly in a mortar to get a homogeneous mushy mass.
  6. Rinse the rosemary thoroughly under running water, shake off the drops or dry the branches with a clean towel, remove the needles.
  7. Pour olive oil into a small bowl, heat slightly in the microwave, and then combine with rosemary and juniper puree.
  8. Pour the resulting sauce over our ready-made vegetables. This appetizer is good to serve with a hot side dish, and especially with pork steak, steak or barbecue.
  9. Also note: you can replace the set of vegetables with any other that you like best, but the main thing is to pick vegetables with different colors, because this way the dish looks much more beautiful and appetizing.
