This dish will decorate any table and make your mood wonderful, since vegetables and herbs, with their taste and useful properties, affect not only the physical, but also the emotional state of a person. Since the ingredients do not need to be additionally cooked (boiled), the cooking time for this healthy and, at the same time, hearty dish is very short!
Ingredients:
For filling:
• several cauliflower inflorescences, coarsely chopped
• 1 medium carrot, coarsely chopped
• a handful of currants (or raisins without oil and unsweetened)
• a handful of parsley leaves, coarsely chopped
• 3 tablespoons lemon juice
• a pinch of sea salt
• freshly ground black pepper
• chili pepper (to taste)
For wrapping:
• a handful of finely chopped red cabbage
• 1 avocado, peeled and cut into thin slices of medium
• 5-10 lettuce leaves
Cooking method:
1. Add cauliflower and carrot chunks to a food processor or blender and mix quickly.
2. Put the resulting mixture in a large bowl and mix with the rest of the ingredients.
3. Add some more cauliflower, mix and place back in the food processor and stir again until you have a finely chopped mixture.
4. Place 2 tablespoons of this mixture on a lettuce leaf (or half a leaf, whichever is large). Top with a few kale and avocado slices. Roll the sheet, tucking it in one direction so that it does not fall apart.
5. Transfer a few topped lettuce leaves to a nice plate and garnish with cherry tomatoes.
