A very harmonious soup with a light hint of almonds, fresh vegetables, tenderness of avocado and wonderful taste of tomato juice! Gazpacho is a soup that is served chilled. An excellent alternative to all the familiar okroshka.

- - 350 ml tomato juice;
- - 200 g fresh shrimp;
- - 30 ml of wine vinegar, olive oil;
- - 1 avocado;
- - 5 pieces. almonds;
- - 3 cloves of garlic;
- - 1 small cucumber;
- - 3 tbsp. tablespoons of lemon juice;
- - 1 ripe tomato;
- - half a green pepper;
- - ground black pepper, sea salt, olive oil for frying.
Instructions
Step 1
Mix lemon juice with ground pepper and salt, in this mixture marinate peeled fresh shrimp for 10-15 minutes. If you took frozen shrimp, then you must first defrost them.
Step 2
Fry the marinated shrimps in a little olive oil, put in a container, and refrigerate while you prepare the other ingredients for the soup.
Step 3
Cut the tomato into large pieces, it is better to remove the skin, lightly fry. Cut fresh cucumber into cubes. Grind the garlic with almonds into the gruel and put in a bowl, add the fried tomato, cucumber and chopped green pepper there.
Step 4
Pour wine vinegar with olive oil into tomato juice, mix. Add salt to taste.
Step 5
Cut the avocado into large pieces and place with the rest of the vegetables. Pour in tomato juice, mix thoroughly, cover the container with a lid or cling film, put it in the refrigerator for 10-12 hours. During this time, the vegetables will "make friends" with each other, all the flavors will enrich each other - you will get an incredible taste!
Step 6
Pour chilled tomato gazpacho into soup bowls and place in each serving of fried shrimp. Serve shrimp, avocado and almond gazpacho right to the table.
