Basque pie is a delicious closed pie made from delicate shortcrust pastry flavored with rum. In the Basque country, such pastries are traditional. The classic version of the pie is prepared with a fresh cherry or cherry filling.
It is necessary
- - 800 g of sweet cherries or cherries;
- - 600 g flour;
- - 250 g butter;
- - 250 g of sugar;
- - 75 ml of rum;
- - 50 g of almonds;
- - 2 whole eggs;
- - 2 egg yolks.
Instructions
Step 1
Rinse fresh cherries, remove seeds. Sift flour through a sieve, chop almonds into crumbs. Separate 2 egg yolks, we also need 2 whole eggs for the pie.
Step 2
Whisk softened butter and yolks with sugar. You can use powdered sugar instead of sugar to get a more delicate consistency in the finished dough. The mass should be light and fluffy. Add eggs, pour in rum, continue beating until a homogeneous creamy consistency is formed.
Step 3
Now add the sifted flour, quickly knead the dough. It is not necessary to knead it for a long time, it will become plastic and homogeneous so quickly. Wrap the finished dough in plastic wrap, refrigerate for 30-50 minutes.
Step 4
Divide the chilled dough in two, one larger than the other. Roll out 2/3 of the dough on a clean surface, then cover the bottom of the mold with it, forming sides with a height of 3-4 centimeters. Sprinkle with ground almonds. Place the cherries on top. Cover with the remaining dough.
Step 5
Bake the Basque pie for 1 hour at 180 degrees in the oven. Chill the pie before serving, and then cut into portions.
