  • - 4 eggs;
  • - 4 tomatoes;
  • - 2 zucchini;
  • - 1 onion;
  • - 1 red fresh pepper;
  • - 2 cloves of garlic;
  • - 2 tbsp. tablespoons of olive oil;
  • - 80 g of Gruyere cheese;
  • - 2 teaspoons of chopped parsley;
  • - black pepper, salt.

Instructions

Step 1

Heat the olive oil in a heavy-bottomed skillet. Peel the onion, chop finely, put in a frying pan, fry together with red pepper, cut into squares.

Step 2

Then put the zucchini cut into thin slices in a frying pan, fry on both sides. If the zucchini is young, it is not even necessary to peel them.

Step 3

Peel the tomatoes by scalding them with boiling water. Chop finely, put in a skillet with zucchini. Add chopped garlic. Season with salt and pepper to taste, leave on fire for a couple of minutes.

Step 4

Now place the vegetable mixture in two oiled tins. In each mold, make two indentations, break two eggs into them. Sprinkle with grated cheese on top.

Place the molds under a preheated grill, cook for 10-15 minutes. Sprinkle the ready-made gratin with Basque eggs generously with fresh parsley, serve immediately directly in the tins.
