Chicken breast itself is a light yet satisfying dish. According to this recipe, the breast turns out to be soft and juicy, and this is the most important thing, because often chicken meat turns out to be dryish. We will use pistachios and soft cheese as filling.

It is necessary

  • - 4 chicken breasts each weighing 150 g;
  • - 50 g soft cheese;
  • - 50 g of peeled and unsalted pistachios;
  • - 1 orange;
  • - 2 tbsp. tablespoons of olive oil;
  • - black pepper, salt.

Instructions

Step 1

Rinse the chicken breasts under running water and pat dry with paper towels. Cut a longitudinal pocket in each breast with a sharp knife. Salt the meat both outside and inside the pocket. Season to taste.

Step 2

Peel and grind the pistachios in a blender. We must take unsalted nuts. Either grate the soft cheese or mash it with a fork, then mix with the chopped pistachios. You will get a pasty mass.

Step 3

Pour boiling water over the orange, pat dry on a paper towel. Finely rub the zest from the orange and mix with the pistachio cheese paste. Fill the pockets in the chicken breasts with the resulting mass, fasten the edges with toothpicks previously moistened with cold water.

Step 4

Brush the prepared chicken breasts with olive oil on all sides, for this it is more convenient to use a culinary brush. Preheat the grill or grill pan, grill the meat for no more than 15 minutes, constantly turning it over.

Step 5

Chicken breast with pistachio filling is ready; small tomatoes, also lightly fried on the grill, are suitable as a light side dish for such a tender chicken. It is not recommended to make a delicate dish heavy with hearty side dishes (for example, pasta or buckwheat).
