Parkin Ginger Oatmeal is a traditional English dish. One of those only served on holidays. A properly cooked cake keeps well and only gets juicier over time, and it will take no more than an hour to cook.

It is necessary

    • 1 glass of hot water;
    • 1 glass of dried apricots;
    • 150 g chopped candied ginger;
    • 200 g rye flour;
    • 140 g unsalted butter;
    • 100 g brown sugar;
    • 100 ml of milk;
    • 150 g of rolled oats;
    • 1 egg;
    • 0.5 tsp soda;
    • 0.5 tsp salt;
    • 1 tbsp ground ginger;
    • 1 pinch of ground cloves
    • 1 pinch ground cinnamon
    • baking dish.

Instructions

Step 1

Rinse the rolled oats from flour and flour dust, then pour a glass of hot water, stir, cover tightly and let it brew and cool slightly.

Step 2

Combine the sugar and butter in a separate saucepan, preferably thick-bottomed. Place the saucepan over low heat and melt the contents, stirring always. Make sure that the sugar dissolves completely, but the mixture does not burn. Before boiling, remove the pan from heat and let cool for 10 minutes.

Step 3

In a large bowl, combine rye flour, baking soda, salt, ground ginger, cloves, and cinnamon. Rinse dried apricots well and cut them into small pieces. Add dried apricots and two-thirds of the candied ginger to a bowl of flour.

Step 4

In a separate bowl, beat the egg and milk until smooth, mix with the steamed cereal and add the warm butter and sugar mixture. Mix everything. Pour the resulting mass into a bowl with flour and spices, mix well again. Make sure that no lumps form, the mass should be homogeneous and even.

Step 5

Preheat oven to 150 degrees. While the oven is heating, grease the muffin tin with oil or fat and add the dough to it. Make sure that the dough takes up the entire form, do not press it too much, but also do not leave empty spaces. Sprinkle the remaining chopped ginger over the top and place in the oven. When the oven is hot, place the cake in the middle compartment and bake for 45 minutes. The mass should become firm and slightly lag behind the walls of the mold.

Step 6

When the cake is ready, remove it from the oven, place it on the wire rack and let cool for 20 minutes. Only then can it be removed from the mold and cut into pieces. Parkin is best served with butter. Thanks to the presence of ginger, the cake gets a very warm, spicy taste, which is fully revealed in combination with tea or coffee.
