Vegetable stew is a delicious, satisfying and healthy dish. Add some curry and coconut milk to give it an oriental flavor. The taste of the dish will turn out to be very delicate and unusual.

It is necessary
- - 30 ml of olive oil;
- - 2 cloves of garlic;
- - 2.5 cm of ginger root;
- - 2 spoons of curry;
- - 3-4 medium-sized carrots;
- - small onion;
- - 2 tablespoons of tomato paste;
- - 400 g of tomatoes;
- - 450 g frozen broccoli and cauliflower mixture;
- - a can of coconut milk (400 ml);
- - half a teaspoon of salt and sugar;
- - a few sprigs of cilantro.
Instructions
Step 1
Peel and grate the ginger, squeeze the garlic. Heat the olive oil in a frying pan, fry the garlic and ginger over medium heat for 1-2 minutes. Add curry and stir for another minute.

Step 2
Peel the carrots, cut into thin slices, and chop the onion. Add to the pan, fry until the onion is transparent.

Step 3
Cut the tomatoes into small cubes, put them in a frying pan with tomato paste. Stir until the tomato paste is completely dissolved.

Step 4
Put broccoli and cauliflower in a frying pan, increase the temperature, stir the vegetables and simmer them under the lid for 10-15 minutes until tender.

Step 5
Reduce the temperature to a minimum and pour the coconut milk into the pan. Mix the ingredients thoroughly, simmer the vegetables for 5 minutes. Add salt and sugar, mix and serve with a little chopped cilantro.
