Layered rhubarb pie is very popular in a country like Finland. I suggest you also taste this dish and enjoy it to the fullest.
It is necessary
- - butter - 200 g;
- - sugar - 2 tablespoons;
- - eggs - 3 pcs;
- - flour - 2 glasses;
- - baking powder for dough - 2 teaspoons;
- - vanilla sugar - 1 teaspoon;
- - cardamom - 0.5 teaspoon.
- Filling:
- - rhubarb - 500 g;
- - sugar - 1 glass;
- - water - 0.5 cups;
- - potato starch - 2 tablespoons;
- - cinnamon - 0.5 teaspoon.
Instructions
Step 1
With rhubarb, do the following: rinse thoroughly, remove the skin and chop, cut into small pieces. Set aside about 1 cup of rhubarb from the resulting mass - it is needed in order to decorate the future pie.
Step 2
Pour water into a small saucepan. Add granulated sugar to it. Mix well and put on fire. Cook until the second ingredient is completely dissolved. This will create a sugar syrup.
Step 3
Mix the remaining rhubarb with sugar syrup, potato starch and cinnamon. Put this mass in a free saucepan and put on fire. Cook, stirring continuously, until thick. Under no circumstances should this mixture be boiled. Cool the finished filling.
Step 4
Soften butter by keeping it at room temperature and combine with granulated sugar. Beat the resulting mixture with a mixer. Add chicken eggs there one by one. After adding each, do not forget to beat the mixture until a firm foam.
Step 5
Add baking powder for the dough, as well as cardamom and vanilla sugar to the resulting mass. Stir until smooth. This way you should have a thick dough.
Step 6
Take a baking dish with a diameter of about 25 centimeters, cover with a sheet of parchment. Then grease it with butter and place half of the thick dough on the bottom. Spread it over the entire surface. Pour the filling over it. Put out the rest of the dough. Garnish the top of the pie with the left rhubarb and almond petals.
Step 7
Preheat the oven to 200 degrees and send the dish into it for 50 minutes. Cool the finished baked goods and serve with ice cream. The layered rhubarb pie is ready!
