It is very difficult to overestimate the benefits of barley dishes for our body. This cereal must be included in the diet of children. And since many kids often refuse to eat porridge, which has such a nondescript appearance, delicious and hearty soups are an excellent solution.

- Barley meat soup:
- 400 g of beef;
- 2-3 potato tubers;
- half a glass of barley;
- 1 onion;
- 1 medium carrot;
- 2 stalks of celery;

- Mushroom soup with barley:
- 0.5 kg of mushrooms;
- half a glass of barley;
- 3-4 carrots;
- 1 onion;
- 2 tbsp tomato paste;
- olive oil;
- salt

- Sweet milk soup:
- 150 g of pearl barley;
- 2 liters of milk;
- sugar
- salt;
- butter.
Instructions
Step 1
Rinse the pearl barley thoroughly, place in a deep bowl, cover with boiling water and leave for a couple of hours. Cook the meat until cooked through, then remove it. Add steamed barley to the boiling broth. In hot vegetable oil, fry the chopped onions until golden brown, and then add the grated carrots. When the vegetables are sufficiently browned, place the chopped celery in the skillet, cover and simmer for 10 minutes. Cut the potatoes into small cubes and add to the broth when the barley is almost ready. Cut the boiled meat into pieces and add to the soup. Then season it with fried vegetables, salt and pepper, put bay leaf. When the broth boils, remove it from the heat.
Step 2
Mushroom soup with pearl barley Bring the water to a boil, then add thoroughly washed pearl barley to it and simmer over low heat for 30-40 minutes. Then drain the water. Fry the onions and carrots in hot olive oil, then add the chopped mushrooms and simmer until cooked. If you are using mushrooms, you can fry them right away. If the mushrooms are forest, boil them first. Season the frying with tomato paste (if it is too thick, it is better to pre-dilute it with a little water) and simmer for 2-3 minutes. Pour the boiled barley with new water or meat broth. When it boils, add frying, salt, season with spices and simmer over low heat for another 5 minutes.
Step 3
Sweet milk soup In boiling water, place the washed barley and cook over low heat for 40 minutes. Heat the milk and, without bringing it to a boil, add the boiled pearl barley, salt, add sugar to taste and cook for another 20 minutes, stirring occasionally and making sure that the milk does not burn at the bottom. Better for this to cook the soup in a water bath. Place the butter in a bowl of soup.
