A biscuit is a simple, round-shaped open pie with sides made of crumbly and crunchy dough. In the filling of French pastries, you can use any fruit or berries, varying the amount of sugar to taste.

It is necessary

  • For the test:
  • - 150 g flour;
  • - 1/4 teaspoon of salt;
  • - 90 g butter;
  • - 40 ml of water;
  • - 0.5 teaspoon vinegar
  • For filling:
  • - 250 g of peaches (nectarines);
  • - 25 g of sugar;
  • - 2 teaspoons of starch;
  • - an egg;
  • - 100 ml of Greek yogurt;
  • - 100 ml ricotta;
  • - 1/4 teaspoon vanilla extract
  • For baking:
  • - yolk;
  • - a tablespoon of milk (cream);
  • - 2 teaspoons of sugar

Instructions

Step 1

Chop the chilled butter into cubes. Stir the flour and salt well. Combine flour mixture with butter until crumbly.

Step 2

Introduce vinegar into the liquid and slowly pour into the creamy flour mass, without ceasing to stir. Beat until the dough begins to clump around the blender knife.

Step 3

Place the dough on a lightly floured cutting board and divide into two portions. Form each part into a small disk and wrap it in plastic wrap. Refrigerate for 30 minutes.

Step 4

Make the filling. Chop the fruit, mix with sugar and starch. In a separate bowl, whisk together the egg, Greek yogurt, ricotta, and vanilla extract.

Step 5

Greek yogurt can be replaced with any unflavored thick yogurt, for example, from Prostokvashino. Divide the filling in two.

Step 6

Roll out one chilled dough on a floured surface into a 20-25 cm circle. Place half of the yoghurt mixture in the center of the circle, spread one part of fruit on top.

Fold the edges of the dough gently towards the center, lightly covering the filling. Thus, form the second biscuit. Place both biscuits in the freezer for 20 minutes.

Step 8

If desired, you can prepare biscuits in advance by storing them in the freezer. Line a baking sheet with baking paper.

Step 9

Place the biscuits on a prepared baking sheet. Mix the yolk with milk and brush the edges of the biscuits, sprinkle with sugar on top.

Step 10

Bake in an oven preheated to 200 ° C for 45 minutes. Cool on a baking sheet and serve.
