Pelamushi is a dessert related to Georgian cuisine. Pelamushi are traditionally prepared from the juice of dark grapes and corn flour.
It is necessary
- - grapes - 1 kg
- - water - 1, 2 l
- - corn flour - 200 g
- - sugar - 3 tablespoons
- - walnuts for decoration
- - optional vanillin or cardamom - to taste
Instructions
Step 1
To prepare dessert, wash the grapes, remove the berries from the stalks. Put the prepared berries in a saucepan and cover with water so that the berries are only slightly covered. Boil for a few minutes, until soft, strain the broth. The berries need to be crushed and squeezed out, adding to the broth. The cake can be thrown away.
Step 2
Add sugar to the berry broth. You can also add some vanilla or cardamom to taste. Add enough water to bring the total volume of liquid to 1.2 liters. Pour a little broth into a separate container and cool. Combine this chilled broth with cornmeal and gently pour into the bulk. Stir continuously to avoid clumping.
Step 3
Place the saucepan with the broth on the stove and cook over low heat, stirring constantly, for 15 to 20 minutes. By the end of cooking, when the mixture has thickened enough, you will need to stir quite vigorously so that the dish does not burn or lumps appear.
When the mass is ready, it separates from the sides of the saucepan, which is clearly visible.
Pour the hot mass into molds, cool and refrigerate for 10 - 15 minutes.
