  • - vegetable oil - 6 tablespoons
  • - garlic, hot peppers, herbs - to taste
  • - onion - 1 piece
  • - water - 1.5 l

Step 1

Get a heat-resistant ovenware that can be placed in a hot oven. For example, a cauldron.

You will also need a deep frying pan.

Prepare all vegetables. Peel and coarsely grate the beets and carrots. Cut the peeled onions into strips (or feathers). Dice the peeled potatoes. Cut the mushrooms into thin slices.

Step 2

Heat the cauldron and pour in a third of the vegetable oil. Then put onion, simmer for a minute, add potatoes, stir. Now cover our cauldron with a lid and simmer vegetables over low heat for 2 - 3 minutes. Then add the cabbage and mushrooms and simmer, covered, while the other vegetables cook.

Step 3

Pour another third of the total amount of vegetable oil into the pan, immediately add the beets and carrots, simmer, stirring occasionally, for 3 to 5 minutes. Transfer the vegetables to a cauldron. Do not stir.

Pour 1, 2 liters of hot water into a cauldron, bring to a boil and immediately remove from heat.

Step 4

Pour the rest of the vegetable oil into the pan, then add the tomato paste mixed with salt, sugar and spices. Fry over medium heat. In this case, it is necessary to constantly stir the mixture. Cook until the tomato paste changes color. Pour in the remaining water, stir so that there are no lumps, and pour into the cauldron.

Step 5

Preheat the oven to 170 degrees. Put the cauldron with borscht in the oven, simmer for about 1 hour.

Add crushed pepper and garlic, stir. Turn off the heat and simmer the borscht in the cooling oven for about 10 minutes.

When serving, you can sprinkle with any chopped herbs to taste.
