The pickle soup, familiar to many, can be cooked not only with lamb, but also with other types of meat. It is cooked with kidneys, other offal, and even fish. In fasting, you can make this soup without meat or poultry at all.

It is necessary

  • For broth:
  • - 500 g of lamb;
  • - half an onion;
  • - half a carrot;
  • - 3 liters of water.
  • For soup:
  • - 5 tbsp. l. pearl barley;
  • - 2-3 potatoes;
  • - half an onion;
  • - carrot;
  • - 2 cloves of garlic;
  • - 4-5 pickles;
  • - a little salt;
  • - a little ground pepper;
  • - cucumber pickle to taste.

Instructions

Step 1

Put the washed lamb in a saucepan, add half of the onion, half of the peeled carrots, pour three liters of cold water and put on fire. Cook the lamb until tender, do not forget to remove the foam when cooking. You do not need to remove the foam, but after that you will need to strain the meat broth through a napkin. We take out vegetables from the finished broth, we no longer need them.

Step 2

Wash the potatoes, peel them, cut them into cubes or cubes - to taste. We wash the pearl barley well.

Step 3

Put the potatoes and barley in a saucepan, pour in the meat broth and cook until the potatoes are ready.

Step 4

For the soup, peel and chop vegetables, which we fry in vegetable oil. Add chopped cucumbers to the pan to the vegetables, continue to fry for two minutes.

Step 5

Peel the finished lamb, cut into small pieces.

Step 6

Put the fried vegetables and meat in a saucepan with potatoes and barley. We boil for 3-4 minutes. Salt a little and season with ground pepper to taste, add brine. Season with fresh chopped herbs. Leave the soup for half an hour, then pour it into plates and serve
