During the cold season, it is very important to serve soups for lunch. They warm the body and give strength. Surely many have heard about pickle, but not everyone prepared it at home. In fact, there is nothing difficult in preparing this first course. If you have pearl barley and a couple of pickles, then you can easily feed your family with this rich aromatic dish.
It is necessary
- - beef (brisket and / or ribs) - 600 g;
- - pearl barley - 100-150 g;
- - large onions - 1 pc.;
- - carrots - 1 pc.;
- - potatoes - 3 pcs.;
- - small pickled cucumbers - 2 pcs.;
- - bay leaf - 2 pcs.;
- - ground black pepper;
- - salt;
- - vegetable oil for frying.
Instructions
Step 1
Before cooking, soak the pearl barley in cold water for at least 2 hours. Rinse the beef well and lower it into a saucepan, pour in 2 liters of water, bring to a boil. As soon as the water boils, remove the froth, reduce the temperature to a moderate value and cook with the lid ajar.
Step 2
30 minutes after boiling, pour the barley into a saucepan and cook until cereals and meat are cooked. Average total soup preparation time: 2 hours.
Step 3
Peel and rinse potatoes, onions and carrots. Cut the potatoes into strips, the onions into small cubes, and grate the carrots and pickles on a coarse grater.
Step 4
Half an hour before the end of the time, transfer the potatoes and grated cucumbers to a saucepan. After that, take a frying pan and pour in some vegetable oil. When it's warmed up, add the chopped onion and fry until transparent. Add grated carrots and black pepper. Fry with the onions for a few minutes, stirring occasionally. Then transfer the fry to a saucepan.
Step 5
Add some salt and bay leaf 10 minutes before the end of cooking. When the dish is ready, remove the saucepan from the stove and let it sit for 10-15 minutes to let the soup steep a little. After that, it can be poured into deep bowls and served with fresh bread, croutons and chopped fresh herbs.
