Mamul and siva is a sweetness that is most often made in Arab countries on holidays. Mamul is a nut filling, while siva is a stuffing of dates. The dough is tender, crumbly.

Step 1
First, mix semolina with ghee, vanilla, baking powder and mix everything well, add a little water. The dough should be elastic. Place the dough in a cold place for 1-1.5 hours.
Step 2
Make a syrup. Mix water and 500 g of granulated sugar, cook over medium heat until boiling.
Step 3
Prepare the filling. Chop the nuts and mix with the syrup to make a smooth paste. Remove seeds and stalks from dates, then pass through a meat grinder 2-3 times.
Step 4
Make balls of the dough, and then make a cup of the dough, lay out the filling and squeeze the dough around the filling.
Step 5
Place on a baking sheet lined with parchment paper. Place in an oven preheated to 180 degrees for about 15-20 minutes.

Sprinkle Mamul and Siwa with icing sugar. And serve.
