Step 1
First, separate the 6 whites from the yolks. Then mix the yolks with butter, 150 ml orange juice and 1/3 granulated sugar. Place in a water bath and heat until the granulated sugar is completely dissolved.

Place the yolk mixture in a saucepan of ice water and beat with a whisk until firm foam. Add orange zest and flour. Whisk the whites with granulated sugar. Pour into the dough in a thin stream.

Pour the dough into a baking sheet lined with parchment paper and greased with butter. Preheat the oven to 180 degrees, place the crust and bake for 20-25 minutes until golden brown. Remove the cake and leave to cool. Then cut into 2 layers.

Prepare the cream. Mash 3 yolks with granulated sugar and 100 ml cream.

Heat the rest of the cream, pour in the yolk mixture in a thin stream and stir until smooth. Put on low heat, about 5-7 minutes. Remove from heat and cool.
Step 6
Put the first crust on a dish, saturate it with cream, cover with the second crust and leave it for 6-8 hours to soak.
Step 7
Cut 1A from the soaked cake. Lubricate the sides of the cake generously with cream.
