Risotto is a national Italian dish. Its delicate taste will leave few people indifferent. The dish is not very difficult to prepare and it is quite possible to do it at home. It is perfect for a romantic or business dinner.
It is necessary

- - carrots 1 pc.;
- - onions 2 pcs.;
- - butter 100 g;
- - dry white wine 200 ml;
- - round grain rice 200 g;
- - Parmesan 50 g;
- - salt;
- - ground black pepper.
Instructions
Step 1
Separate the chicken from the bones and cut into cubes. Peel the onion, leave one onion whole, chop the other very finely. Rinse and peel carrots and celery well.
Step 2
Pour 1.5 liters of water into a saucepan, put chicken bones, carrots, a whole onion, celery, salt and pepper. Bring to a boil, reduce heat, and simmer for 30 minutes. Then strain the broth, pour out 500 ml and put on low heat to simmer.
Step 3
In a separate saucepan, melt 65 g of butter, sauté the onion and add the chicken. Fry everything for about 10 minutes, until the meat is browned. Then salt and pepper and pour in white wine. Simmer until completely evaporated, stirring constantly.
Step 4
Pour rice with chicken meat, fry for 2-3 minutes, pour in chicken broth and cook until the broth is completely absorbed. Remember to stir the risotto. When the risotto is done, add the remaining butter and grated Parmesan to it, and stir well. Leave covered for 5-7 minutes and serve.
