Zucchini and dried apricot jam has a delicate aroma, and tastes like a sweet pineapple dessert. Preparing such a homemade product is very simple.

It is necessary

  • - 3 kg of young zucchini,
  • - 500 g of dried apricots,
  • - 3 kg of sugar,
  • - 1 lemon.

Instructions

Step 1

Rinse the zucchini thoroughly in running water and dry. Remove the skins from each courgette. If you use old zucchini for cooking, then cut out the middle with seeds from them, remove the peel. Cut the courgettes into random pieces.

Step 2

Sort out 500 grams of dried apricots, it should be clean, without specks. Put dried apricots in a bowl, boil with boiling water for two minutes. After a few minutes, drain the water and dry the dried apricots with paper towels.

Step 3

Put slices of zucchini and dried apricots in a meat grinder (if you wish, you can use a blender), scroll until smooth. Transfer the resulting puree to an enamel bowl or into a large saucepan, add 3 kg of granulated sugar.

Step 4

Put the mashed potatoes on fire and, with slow stirring, so as not to burn, bring to a boil. After boiling, reduce heat and simmer for half an hour.

Step 5

Rinse the lemon, pour over boiling water. Finely grate the zest, you can directly with the peel, there is nothing wrong with that. Squeeze the juice out of the pulp. Add the zest and lemon juice to the jam, stir and cook for another 15 minutes.

Step 6

Remove the finished jam from the heat and immediately place in small jars, close the lids. You do not need to wrap the jam in jars with a warm towel, leave it to cool at room temperature. Store the jam in the usual way.
