The main component of this salad is rice, it must be boiled in advance, cooled. And immediately before serving, mix with the rest of the ingredients - onion, chicory and lemon juice.
It is necessary
- - 1 glass of long grain rice;
- - 1 glass of golden raisins;
- - 1 1/2 cups of water;
- - 1 head of red chicory;
- - 2 feathers of green onions;
- - 3 tbsp. tablespoons of lemon juice;
- - 1 tbsp. a spoonful of olive oil;
- - salt, ground black pepper.
Instructions
Step 1
Bring water to a boil, pour rice into it, cook over low heat in slightly salted water until tender - 15 to 20 minutes. The rice should become soft by absorbing all the liquid. Pepper the cooked rice, stir, remove from the stove and let stand for 5 minutes.
Step 2
Stir the rice with a fork, add golden raisins to it, pour in 1 tablespoon of olive oil, stir, transfer the resulting mixture to a deep bowl or salad bowl. cover the dishes with cling film, put in the refrigerator for 1 hour.
Step 3
Rinse green onions, chop finely. Chop the head of red chicory, too, as you like.
Step 4
Remove the bowl of rice and raisins just before serving. Add lemon juice, chopped green onions and a chopped head of red chicory to the mixture. Season with salt and pepper to taste. Stir the prepared salad and serve.

Additionally, the rice salad with raisins and red chicory can be garnished with sprigs of fresh herbs.
